As an extremely studious and passionate person, Olivier, originally from Nice, began frequenting the wine shop La Part des Anges, which eventually led to him working there serving wine. At the time, he was a law student, and after this eye-opening encounter with wine, he continued studying while also participating in wine tastings and selling wine, gradually becoming fully immersed in the world of wine. Initially, he dreamed of opening his own bistro, but the owner of the shop where he worked advised him to first learn winemaking. He then trained at Domaine Rivaton, Domaine Arena, and Domaine Valette. In addition, he visited winemakers throughout the region and deepened his knowledge in this new world.
While preparing to open a bistro together with the shop owner, Olivier was offered the opportunity to work with Thierry Allemand, which ultimately changed the direction of his career. He obtained an agricultural certification in Saint-Péray and simultaneously engaged in an internship at Domaine Gonon. There, he learned everything he could about viticulture (grape growing).
In 2014, he met Argellier in Languedoc. He took over 7.5 hectares of vineyards in Terrasses du Larzac and also purchased an additional 7.5 hectares of land and forest. On this newly acquired land, he planted 4 hectares of vines. Including rented parcels, the estate has now expanded to nearly 20 hectares. The domain is also home to around 40 sheep, which have become an important part of the team.
He has two business partners, including Jean, who is from Montpellier. They met at a tasting event in 2017 and immediately connected, eventually deciding to work closely together hand in hand.
