Issu d’une famille de vignerons depuis son grand-père, Thomas Pico produit des Chablis natures en Bourgogne.
Après des études de vinification à Beaune, il travaille deux ans chez Joseph Voillot, puis deux ans chez Dominique Derain. Bien qu’il ait voulu apprendre le travail de la vigne dans d’autres pays, il revient auprès de sa famille et crée son propre domaine en reprenant les vignes de son père en 2004. 2006 est son premier millésime, et à partir de la même année, il décide de convertir les vignes vers l’agriculture biologique.
Actuellement, il produit environ 80 000 bouteilles par an sur 20 ha de vignes âgées d’une 30aine d’année. Une partie des vignes est replantée chaque année. Aucun herbicide ou pesticide n’est utilisé, et la cave est maintenue dans un état de propreté extrême afin d’éviter les bactéries.
Thomas pratique l’agroforesterie depuis plusieurs années. Il a planté 180 tilleuls, érables et huit autres espèces d’arbres par hectare afin de faire revenir les chauves-souris ou d’autres oiseaux qui ont disparu dans la région. Etant conscient des problèmes liés à l’utilisation de pesticides par de nombreuses entreprises de Chablis, Thomas cherche à protéger la terre et l’environnement pour les futures générations.

Born into a family of winegrowers since his grandfather, Thomas Pico produces natural Chablis in Burgundy.
After studying winemaking in Beaune, he worked for two years with Joseph Voillot, then two years with Dominique Derain. Although he wanted to learn the art of winemaking in other countries. That’s why he returned to his family and set up his own domain, taking over his father’s vineyards in 2004. 2006 was his first vintage, and that same year he decided to convert the vines to organic farming.
Today, he produces around 80,000 bottles a year from 20 ha of 30-year-old vines. Part of the vines are replanted each year. No herbicides or pesticides are used, and the cellar is kept extremely clean to avoid bacteria.
Thomas has been practicing agroforestry for several years. He has planted 180 lime trees, maples and eight other tree species per hectare, with the aim of bringing back bats and other birds that have disappeared from the area. Aware of the problems associated with the use of pesticides by many Chablis companies, Thomas is keen to protect the land and the environment for future generations.

ブルゴーニュの自然派シャブリの生産者トーマ・ピコ。彼の祖父も父もブドウをつくっていた。
ボーヌで醸造を学んだあと、ジョセフ・ヴォワイヨの元で二年間、ドミニク・ドゥランの元でも二年間働く。他国の畑仕事やワイン造りを学びたかったものの、研修のあと家族のドメーヌへと戻る。自らのワインをつくりたかった彼は、2004年自身のドメーヌを設立。父から畑を引き継ぐ。翌年2006年が初ヴィンテージで、この年から有機栽培へ転向した。
現在彼は20 haの畑で、年間約8万本のワインをつくっている。平均樹齢は30年。毎年ブドウの木を植え替えている。もちろんここでは除草剤や殺虫剤は一切使用しない。セラーは細菌を避けるために極限まで清潔に保たれている。
彼は数年前からアグロフォレストリーを実践している。いなくなってしまった鳥やコウモリを呼び戻すためだ。1 haあたり180本の菩提樹やカエデをはじめとした8種類の樹木を植えている。彼はシャブリの多くの企業が農薬をつかっていることについて問題意識を持っている。未来の世代のために、この土地を守っていきたいという。
