Fils d’Olivier Cousin, Baptiste a voyagé et a travaillé dans différents pays, notamment au Japon.
En 2012, il fonde le Domaine Le Batossay à Angers, dans la Loire. Influencé par son père Olivier, mais également par ses différentes rencontres (notamment Yves Canarelli, Jean-Claude Lapalu, Blandine Chauchat, Antoine Foucault, Sébastien Bobinet ou encore Gilles Azzoni), il se dirige tout naturellement vers l’élaboration des vins natures.
Il achète un petit château à l’abandon, entouré de 12 ha de bois, qu’il aménage progressivement en un meilleur environnement.
Ses 4 ha de vignes sont labourés à la main et au cheval. Il s’agit également d’un vignoble qui a été conduit depuis très longtemps en agriculture biologique, et choyé par plusieurs générations.
Baptiste est en train de créer un écosystème en harmonie avec la flore et la faune autour du vignoble. Afin de minimiser autant que possible son impact sur la planète, il travaille également sur des projets tels que des panneaux solaires et un système de collecte des eaux de pluie pour rendre le vignoble autosuffisant.
En ce qui concerne la vinification, il élabore tous ses vins sans sulfites, non filtrés et non collés. Les raisins sont pressés à l’aide d’un vieux pressoir vertical des années 1930, utilisé par son arrière-grand-père.

Son of Olivier Cousin, Baptiste has traveled and worked in various countries, including Japan.
In 2012, he founded Domaine Le Batossay in Angers, Loire. Influenced not only by his father Olivier, but also by the people he has met (including Yves Canarelli, Jean-Claude Lapalu, Blandine Chauchat, Antoine Foucault, Sébastien Bobinet and Gilles Azzoni), he naturally turned his attention to making natural wines.
He bought a small and abandoned château surrounded by 12 ha of woodland, which he gradually transformed into a better environment.
His 4 ha of vines are ploughed by hand and horse. It’s also a vineyard that has been farmed organically for a very long time and pampered by several generations.
Baptiste is creating an ecosystem in harmony with the flora and fauna around the vineyard. To minimize his impact on the planet as much as possible, he is also working on projects such as solar panels and a rainwater harvesting system to make the vineyard self-sufficient.
As far as winemaking is concerned, he makes all his wines sulfite-free, unfiltered and unfiltered. The grapes are pressed using an old 1930s vertical press used by his great-grandfather.

オリヴィエ・クザンの息子であるバティスト。さまざまな国で旅をしながら仕事を経験。日本では東京と大阪で働いた。
そののち、2012年にロワールのアンジュ―にドメーヌLe Batossay／ル・バトセを設立。父であるオリヴィエの影響ももちろんだが、イヴ・カナレリ、ジャン・クロード・ラパリュ、ブランディーヌ・ショシャ、アントワーヌ・フーコー、セバスチャン・ボビネ、ジル・アゾーニらとの出会いにも大きな影響を受けた。
12haの森林に囲まれた廃墟となっていた小さなシャトーを買い取り、少しずつ少しずつより良い環境へと整えているところだ。
彼の4haの畑は、手作業と馬によって耕されている。ここは長い間ビオ栽培で大切にされていた代々続く畑でもある。
彼は畑の周りの動植物と共存するようなエコシステムをつくろうとしている。地球への影響をできる限り抑えるため、ソーラーパネルや雨水を回収するシステムなどを導入して自分たちで完結できるようにするプロジェクトも進めている。
醸造においても、彼はすべてのワインは亜硫酸無添加、無濾過、無清澄。彼の曽祖父が使っていた1930年代の古い縦型プレス機を使ってブドウを圧搾している。
